Stacked high with perfectly rare, tender beef, sliced thin—but not too thin—Pomodori’s sandwich is a delicious example of the classic North Shore Beef Three-Way, topped with barbeque sauce, American cheese and mayonnaise. Of course, the bun is toasted—and you can tell them if you prefer your meat well done. It may be blasphemous around these parts, but we actually like to change it up sometimes by swapping out the condiments for the sandwich shop’s tasty horseradish sauce. Crafting an idyllic example of the classic North Shore Beef Three-Way is a three-day process that starts with butchering whole animals raised on small farms within 150 miles of this meat emporium. It’s no wonder the sandwich, made from a whopping half-pound of thinly sliced top-round, marinated overnight in a mixture of garlic and seasonings, then cooked for 12 hours sous vide to medium-rare perfection, is generally available only on Fridays and in limited quantities. You just can’t do better than this sandwich, served on a butter-griddled onion roll, with James River barbeque sauce, mayonnaise, and cheese. Call ahead to reserve one, or line up and take a chance.
