Molasses Cookies

Submitted by Barbara Roy

Barbara Notes: I make these every fall.  They are a huge crowd-pleaser and everyone that takes a copy of the recipe end up making them year after year. I often double this recipe and store in the refrigerator for up to a week, then bake cookies on an “as needed” basis.

¾ cup shortening

½ cup sugar

½ cup packed brown sugar

¼ cup molasses

1 egg

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon cloves

½ teaspoon ginger

½ teaspoon salt

In a large bowl cream the shortening and sugars

Add the molasses and egg, beat well

In a separate bowl combine the dry ingredients

Add the dry mixture to the molasses mixture, blending well.

Chill the dough 1 hour.

Shape the dough into small balls and roll in sugar.

Place on cookie sheet.

Bake in 375 degree oven for 9 minutes.  Makes about 4 dozen.
