The cider production barn at Cider Hill Farm was the single largest investment the Cook family made since buying its Amesbury farm back in 1978. Overseen by Chadd Cook, founder and cidermaker at Cider Hill Cellars—and son of owners Karen and Glenn Cook—the facility presses cider only from apples grown on the property. Which means supplies are limited: The family keeps planting more cider apple trees, but it takes about three years for a new planting to bear fruit. Heirloom varieties will be reaching maturity over the next few years, growing the current offerings. Visit the tasting bar to explore the range, from dry to sweet.
